Most people are familiar with frogs, toads, newts and salamanders, but are less familiar with caecilians, which superficially resemble large earthworms. That being said, I’m not following any particular diet or being super restrictive with my calorie intake because I am still breastfeeding and don’t want to dry up! My husband and I are pretty routine at night. We have dinner followed by dessert. He loves ice cream (who doesn’t?) but obviously, I don’t want to stuff my face with Ben and Jerry’s on a daily basis. So, I decided to give Arctic Zero ice cream a try. When I first picked this pint up, I assumed it was a scam because usually anything that seems too good to be true, is. Seems suspicious to me. Seriously? How is that possible? The list of ingredients isn’t horrific either. Most of those ingredients I know or have seen before. The one I wasn’t familiar with was monk fruit concentrate which turns out is a sweetener made from the Chinese fruit of the same name. It seems to be the next up- and- coming “natural” sweetener (I put natural in quotes because I’m sure it’s processed in some way). I, personally, like that Arctic Zero has whey protein added to it so at least there is a tiny bit of nutritional value. Halo, America’s Best Loved Holistic Brand. There are multiple different flavors but I’ve only tried Cookies and Cream and Coffee. My favorite so far is coffee (I love coffee anything!). The thing about this “ice cream” is it’s more like an ice cream replacement. The texture is much different. It is not creamy like your typical Baskin Robbins scoop. I’m not sure how to describe the texture? I leave the ice cream out for a little bit to soften it up. I had some coffee last night with a little Light Hershey’s syrup on top. The ingredients are straight forward, but I’m still skeptical because it just seems too good to be true. I also read that The Today Show did a report on diet ice creams and found that this one in particular was actually under on their calorie count. The Today Show reported that in reality, Arctic Zero ice creams had about 4. The company of course said their calorie count is correct. That, in my opinion, is the best. It does an awesome job replacing ice cream- it’s delicious and healthy! Perfect. Some nights I’m just not in the mood to deal with a food processor. So on those nights, Arctic Zero will do just fine. Have you tried Arctic Zero? If not, what’s your go- to dessert? Low Carb Keto Kentucky Butter Cake Recipe. This gorgeous indulgent low carb Kentucky Butter Cake is going to blow your mind! It’s easily one of the best keto cake recipes I have ever made. Sometimes, size matters and sometimes, bigger is better. I know many of you are enjoying my mini low carb cakes and keto desserts for two but that’s not where we are going today, my friends. Oh no, today, we are going big, bold, and beautiful. And we are heading down into the heart of Dixie and taking inspiration from our beloved Southern friends, who do big, bold and beautiful better than the rest of the world. I mean, these people know how to use butter in a big, BIG way. And anyone who can liberally throw huge amounts of butter in a cake and then drizzle that cake with more butter has my respect. I am pretty certain that I’ve never been to Kentucky. I have a decent sense of US geography but some of those states down in the southeast corner of the country confuse me so I might not even be able to place it on a map. Sorry, Kentuckians, but it’s true and I wager that many of you wouldn’t be able to place the Canadian provinces, so there! But I have plenty of respect for you because hey, you created bourbon, you’re pretty awesome when it comes to horse races, and you know how to knock it out of the park when you make cake. I confess I’d never heard of Kentucky Butter Cake until I saw this glorious Salted Caramel Kentucky Butter Cake from Wishes and Dishes. It was in a Facebook video and had caramel drizzling down all over it and I just stopped in my tracks. Quite literally, I sat there with my jaw hanging open and there is a slight chance that I may have drooled a little. I instantly knew I had to make a low carb Kentucky Butter Cake. It needed a little more research though. A butter cake takes a lot of butter (d’uh, right?). I knew this could present problems when working with almond flour, since it already contains much more fat and moisture than wheat flour. But I really wanted to put the full cup of butter in the cake so it would live up to the name. In the end, I just went for it, offsetting the amount of moisture with some coconut flour, and hoping and praying it would work out. I decided to see how it turned out before adding any caramel sauce to it. Oh man, did this ever work out! This was one glorious low carb almond flour cake. It was gorgeous and rich, and oh so buttery, and I decided that all it needed was a little whipped cream and some berries. We had friends over for dinner and they loved it so much I sent them home with half of it. I kind of regret that decision! Feel free to make some of the best low carb caramel sauce to drizzle over yours. Kentucky Butter Cake. This gorgeous indulgent low carb Kentucky Butter Cake is going to blow your mind!
